Today's recipe was an unexpected delight. I was making a appetizer board for dinner and the intention was to have a lot of small, simple things to pick on and enjoy alongside homemade flatbreads. This consisted of various cheeses, Renaissance oil, roasted peppers, and a dip of some sort.
Aside from keeping the meal simple and low-key considering it had been one of the warmest nights of the season thus far, I also wanted to use ingredients I had on hand.
This butterbean dip proved that not everything has to be complicated to be delicious or include special mystery ingredients to impress the crowd. Today, I'm utilizing pantry staples and evergreen herbs to season. It's a delicious spread for flatbreads or toast (think crostini or toasted ciabatta rolls for a sandwich in place of mayo), it's also great for a veggie dip and even alongside certain meats like pork or chicken. It keeps the meal feeling light yet satisfying with its creamy texture.

Ingredients
- 15 1/2 oz. can of butterbeans
- 1 cup of fresh Italian parsley - loosely fit - then stems removed and chopped
- 6 - 8 garlic cloves
- 1 tsp. salt
- 1 tsp. black pepper
- Juice of half a lemon
- 3 - 4 tbs. olive oil
Instructions
- Place all of the ingredients in a food processor and process until smooth.
- Place in a serving dish and drizzle with little more olive oil and serve with fresh ground black pepper.
