Sweet, floral and decadent- these Lavender Chocolate Chip Cookies are a year round recipe that can be enjoyed with tea, coffee or just because.
Last week I had a vision. I closed my eyes and tasted the sweet, salty air laced in lavender and honeysuckle. Childrens' distant laughter could be heard across the row of homes, echoing down the canals. Yes, summer has arrived in full swing.
The evenings are aglow with soft warm lanterns, fireflies in the garden, and the occasional clap of a firework from nearby. I live for these moments where life fills the normally quiet streets and a cool strong breeze blows in through the windows at night.
While my eyes were closed, taking in these fleeting moments of summer, I was inspired to create something sweet and floral to be enjoyed throughout the season. Enter these Lavender Chocolate Chip Cookies that can been enjoyed on their own or sandwiched with your favorite ice cream.
To start, I blended the sugar with dried lavender buds. Be careful not to overblend otherwise you end up with powdered sugar. Just a few pulses until the lavender is broken down in the sugar is all you need.
These cookies are soft and chewy due to the flour to butter ratio, but also because the dough is not chilled beforehand. Doing so will give you a larger, thinner cookie that is perfect for ice cream sandwiches. I think vanilla bean or honey ice cream works best here.
If you like, you can also top the cookies with coarse sea salt which will balance out the lavender if you want a more subtle flavor.
The end result is a batch of crisps that will leave you wanting more. So, cheers to summer and all its sweetness. I hope you give today's recipe a try and enjoy them as much as we have.

- Yield: 2 dozen 1x
Ingredients
- 1/2 cup unsalted butter, room temp
- 1/2 cup white sugar
- 1 heaping teaspoon dried Lavender buds
- 1/4 cup dark brown sugar
- 1 large egg
- 2 teaspoons vanilla
- 1 1/4 cup AP flour

- 1/2 teaspoon baking powder
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350 degrees F. and line two baking sheets with parchment paper. Set aside.
- In a small bullet blender, combine white sugar and lavender. Blitz only a few times until the lavender is incorporated into the sugar.
- In the bowl of a stand mixer with paddle attachment, whip butter and sugars together. Add vanilla and egg. Beat again until combined.
- Add flour, baking powder, baking soda, and salt. Beat until a soft, sticky dough forms. Lastly add chocolate chips and stir to combine.
- Using a rounded tablespoon, scoop out the cookie onto the prepared baking sheets, leaving about 2-inches of space between each.
- Bake for about 8 minutes until the cookies are lightly golden. Remove and let sit on the baking sheet for about 30 seconds before transferring to a cooling rack.
- Let cool before serving. If making ice cream sandwiches, chill the cookies beforehand in the refrigerator.
