Happy St. Patrick’s Day to all my lovely readers! And what better way to celebrate than with a batch of whimsical Irish Cream Sprinkle Cookies? These delightful treats are a charming embodiment of good luck and cheer, making them perfect for any occasion.
Today’s recipe produces a batch of golden brown cookies, where each bite is bursting with the rich flavors of Irish Cream and buttery sweetness. These sugar cookies are a classic treat, and a surprisingly simple way to add a festive flare your St. Patrick’s Day celebration.
Crafted using only simple ingredients such as butter, sugar, flour, and of course Irish Cream, these cookies are easy to make yet undeniably irresistible. Whether you're hosting a St. Patrick’s Day gathering or simply craving a cozy afternoon treat with a cup of tea, these cookies are a great option to satisfy your sweet tooth.
So, gather your ingredients, tie up your aprons, and let's get baking.
Ingredient Checklist – Everything You’ll Need
- 1 cup butter, softened
- Note: Ensure the butter is room temperature for easier mixing.
- Tip: Unsalted butter is what you want to use for this recipe.
- 3/4 cup white sugar
- Note: Plain, granulated sugar is all we’re looking for here.
- 1 large egg
- Tip: For best results, let the egg warm to room temperature for mixing consistency.
- 2 tablespoons Irish Cream or Irish Cream syrup
- Note: The star ingredient in today’s cookies, Irish Cream adds a delightful flavor, but you can use Irish Cream syrup as a non-alcoholic alternative.
- 1½ cups all-purpose flour
- Tip: Spoon and level the flour to avoid overpacking, which can result in dense cookies.
- 1 teaspoon baking powder
- Note: Baking powder can indeed go bad, and when that happens it ceases to act as a leavening agent. That means you want to check the expiration date of your baking powder for the best results.
- Pinch of salt (approximately 1/2 teaspoon)
- Note: Salt helps balance the sweetness, which in turn results in a richer, deeper flavor.
- Green sprinkles
- Note: The sprinkles are purely cosmetic, so feel free to go nuts here.
- Gold sprinkles
- Note: Once again, purely cosmetic, so feel free to get as creative as you like.
Prep Tips – Getting the Cookies Just Right
- Use Room Temperature Ingredients: Ensure that your butter and eggs are at room temperature before starting. This helps to achieve a smoother consistency in the cookie dough, which in turn results in a better texture for the cookies.
- Prep Your Baking Sheets: For the easiest cleanup possible, line your sheet pans with parchment paper to prevent the cookies from sticking.
- Chill the Dough: After rolling the dough into logs, wrap them tightly in plastic wrap and chill in the refrigerator for at least 20 minutes. This will help the dough to firm up, which in turn will make it easier to slice into cookies.
- Slice with Certainty: When slicing the chilled dough, be sure to use a sharp knife, and to slice them evenly to ensure consistent cookie sizes. Consistent cookie sizes are key to even baking.
- Space Out The Cookies: Place the sliced cookies on the prepared cookie sheets, leaving enough space between each cookie to allow for spreading during baking.
- Bake in Batches: If necessary, bake the cookies in batches to avoid overcrowding the cookie sheets, which can lead to uneven baking.
- Chill Out: Once baked, transfer the cookies to a wire rack and let them cool completely. This prevents them from becoming soggy on the bottom and allows them to firm up properly.
- Proper Storage: Store the cooled cookies in an airtight container at room temperature for optimal freshness. They can also be frozen for longer storage.
- Get Creative: The sprinkles are optional, and entirely a matter of preference. That means you can feel free to let your creativity shine. Use different colored sprinkles, and different shaped sprinkles, or swap out the sprinkles for icing or a glaze. And that note brings us to our next section…
Variations – Getting Creative
- Chocolate Chips: The easiest and most obvious add-in. Simply fold a handful of chocolate chips into the cookie dough, mix until combined, and you’ve got chocolate chip sugar cookies. Do I really need to tell you that Irish Cream and chocolate is a delicious combination?
- European Butter Upgrade: European-style butter is my new obsession, and you can elevate both the flavor and texture of today’s cookies by swapping out regular butter with European-style butter. European-style butter features a higher fat content which adds richness and depth to the cookies because as we all know “Fat is flavor.” And yes, you can combine this upgrade with the chocolate chips I mentioned above.
- Caraway Seed Infusion: Aromatic, earthy, and nutty, caraway seeds make for a delicious add-in. These qualities pair deliciously with Irish Cream, as well as chocolate. If you’re feeling adventurous, you can of course make Irish Cream, chocolate chip, and caraway seed cookies. And yes, you can swap in the European-style butter.
- Nutty Addition: A simple and healthy add-in, a handful of nuts, either sprinkled on top or mixed into the dough will add a nice crunchy texture and nutty flavor. Think pecans, almonds, or walnuts. If you’re feeling ‘extra’ adventurous, you can of course make Irish Cream, chocolate chip, caraway seed, and nut cookies. And yes, you can swap in the European-style butter. These are, after all, delicious combinations.
- Citrus Zest: Adding in a burst of citrusy goodness is as simple as incorporating orange or lemon zest. A half-teaspoon ought to do the trick. The bright and tangy flavor pairs well with the sweetness of the Irish Cream and sprinkles. If you happen to be feeling maximally adventurous, you can of course make Irish Cream, chocolate chip, caraway seed, citrus, and nut cookies. To which you can, of course, swap in the European-style butter. These are all delicious combinations, after all.
- Spiced Variation: Finally, I would suggest experimenting with adding in warm spices like cinnamon, nutmeg, or cardamom to the cookie dough.
- Glazed Cookies: As a finishing touch, after baking, you can of course drizzle the cookies with a simple lemon glaze, or a frosting made from powdered sugar and Irish Cream. You can also dip them in chocolate, and then sprinkle the chocolate with nuts or sprinkles.
Serving Suggestions
For pairing, think hot beverages. Here are my suggestions:
- Irish Coffee: Perhaps the best way to enjoy these cookies is with a classic Irish coffee. The rich and creamy flavor of the Irish Cream cookies is a beautiful complement to the Irish whiskey coffee.
- Hot Cocoa: A cup of hot cocoa is a simple indulgence, one for which these cookies are a delightful pairing. The warm chocolatey goodness of the cocoa perfectly contrasts with the buttery sweetness of the cookies, creating a delightful combination.
- Tea Time Treat: My afternoon pick is a simple cup of tea, such as Earl Grey or Irish Breakfast tea.
- After-Dinner Delight: As a light dessert, these cookies are delicious treats, especially alongside a shot of black coffee.
