    Spicy Peanut Sauce & Oven Fried Chicken

    This creamy peanut sauce is spicy, sweet, and versatile. Today we're serving it alongside oven-fried chicken to bring out the umami flavors of this simple yet delicious family favorite.

    William Cowper, an English poet, once said, "Variety's the very spice of life, that gives it all it's flavour." When he said that, I doubt he was thinking about peanut sauce, but the sentiment reigns true nonetheless.

    Peanut sauce is actually one of my favorite condiments, so I was surprised when I discovered I didn't quite have a proper post for it on LTG. Well, that's all about to change today as I share with you an updated recipe. So, let's get started..

    What I really love about a nutty sauce like this is that it can be very adaptable. You can use any other nut butter you might have on hand and if you really want to downplay the peanut flavor but still keep that rich nuttiness, try a combination of peanut butter and tahini. The sesame offers a well-rounded balance. I also have a tahini-based sauce that I'll share separately which pairs deliciously with tossed soba.

    I was inspired to pair today's sauce with oven fried chicken by an older recipe I had shared back in my earlier days of blogging. However, today's recipe turned out vastly different, and dare I say, a little easier too, making it perfect for busy weeknights. While the former evoked more fusion flavors, the end result of today's recipe is equally delicious and more focused on East Asian spices.

    Ingredients

    Scale

    For the Peanut Sauce:

    • 6 tbs. peanut butter
    • 1 tbs. teaspoon rice wine vinegar
    • 4 - 5 cloves garlic
    • 1 tsp. whole peppercorns
    • 2 tbs. sesame oil
    • 2 tbs. chili paste
    • 1-inch fresh ginger - chopped
    • 2 tbs. lemon juice
    • 2 tbs. honey
    • 2 tbs. soy sauce
    • 2 tbs. teriyaki sauce
    For the Chicken:
    • 1 whole chicken - cut into parts
    • Fresh Cilantro - for garnish
    • Fresh scallions - for garnish
    • 2 cups flour
    • 1 1/2 tsp. salt
    • Cooking oil - for drizzling

    Instructions

    For the Peanut Sauce:

    • Combine all of the ingredients for the peanut sauce and place into a bullet blender and blend until smooth and creamy. Taste for any adjustments you may like.

    For the Chicken:

    • Combine the salt into the flour.
    • Pat the chicken dry with a paper towel.
    • Dredge the chicken into the flour.
    • Drizzle each piece of chicken with the cooking oil.
    • Preheat Oven 375 degrees F. Bake 50 – 55 minutes or until the juices run clear and the chicken is a beautiful golden color.
    • Serve with the peanut sauce drizzled on top and garnished with scallions and fresh cilantro.

      Catherine, We love chicken and we love spicy peanut sauce. We keep a bottle of commercial peanut sauce on hand but your homemade version sounds much better with more spice and kick to the combination of flavors. Take Care, Big Daddy Dave
