There is nothing easier or as satisfying as a fresh fruit crisp. Use any fruit you have on hand or love for this evergreen dessert.
I've always been a fan of fruit desserts especially in the summer. Fresh pies, cobblers, crisps- these are the best way to make the most of summer's harvest in my opinion. A scoop of ice cream and honestly, what more do you need?
Today's recipe was one of those off-the-cuff, 'we have no dessert for tonight, so what can I make in a pinch?' kind of posts. It was a long day and I was craving something that required minimal effort. Enter today's crisp.
It's one of those recipes I'd label a one-bowl wonder and all of the ingredients are pantry staples. You can use any fruit you have on hand for this recipe as well. Stone fruits, apples, pears, berries, pineapple, plums...
You can get creative with this recipes as well and dress it accordingly for the season. Add your favorite nuts to the crumble if you so desire. Oats are another popular addition to the crumb toppings. I kept it simple with just a good old-fashioned streusel with warm notes of cinnamon and vanilla paired with the sweetness of fresh peaches baked underneath.
To top it off you may drizzle with caramel sauce and/or whipped cream or ice cream. I think it's best served warm so the toppings melted into the nooks and crannies of the crumbs.

Ingredients
- 5-6 ripe peaches, sliced
- 1/4 cup granulated sugar
- Juice of 1/2 lemon
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 2 teaspoons vanilla
For the Topping:
- 1 cup AP flour
- 1/2 cup almond flour
- 1 cup brown sugar
- Pinch of Kosher salt
- 1/4 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, toss together all ingredients for the peaches. Set aside.
- In a separate bowl, combine all ingredients for the topping until the mixture resembles coarse crumbs.
- In a greased baking dish, transfer the peaches and their juice. Sprinkle the topping evenly all over the peaches.
- Bake until the topping is golden and the fruit is bubbling, about 45 minutes.
- Serve warm with whipped cream or ice cream. Enjoy!
