There really is nothing like a good "quiche" ;{)

Lightened Up – Crustless Cottage Cheese Quiche
- Total Time: 50 minutes
- Yield: 8 servings 1x
Ingredients

- 4 eggs
- 1 cup milk
- 1/2 red onion - sliced
- 16 oz. low fat cottage cheese
- 1 cup French style frozen green beans
- 1/4 cup grated Parmesan or Romano cheese
- 1/4 cup fresh Italian parsley - chopped
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. red pepper flakes
Instructions
- Preheat Oven 350 degrees:
- In a bowl whisk together the eggs, milk and cottage cheese.
- Add the green beans, onion, Parmesan cheese, parsley and seasons and give another whisk.
- Butter a 9 inch pie plate and add the quiche batter.
- Bake 40 – 45 minutes or until firm in the middle and slightly golden.
- Let cool a bit before slicing.
- Prep Time: 5 minutes
- Cook Time: 45 minutes

This is soo Mediterranean and lovely looking. I was just thinking of baking a tart like this. Cottage cheese is great for tarts and it is light too. Love the recipe and presentation! Bravissima!
