These muffins are perfect for breakfast with a nice cup of coffee or tea. The taste is unique with the spiciness of the ginger which I love.

Hi was just wondering you have 2x eggs listed twice in the ingredients list and wanted to clarify if it's just 2 eggs for one batch or four eggs? Thanks.
Catherine Pappas says
Dear Steve, Thanks for reaching out! I apologize for that typo. The recipe only calls for 2 eggs. If you have any further questions, reach out at any time. Enjoy!

Just recently bought spelt Flour and am excited to try this as my first spelt recipe. I have no sour cream at the time though, would full fat Greek yogurt work as a good substitute?
