These muffins are perfect for breakfast with a nice cup of coffee or tea. The taste is unique with the spiciness of the ginger which I love.
PrintSpelt Carrot and Ginger Muffins
- Total Time: 20 minutes

Ingredients
- 2 cups of spelt flour
- 2 eggs
- 2 inch piece of fresh ginger - grated
- 1 cup of grated carrots
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1/2 cup sugar
- 1/2 tsp. salt
- 4 tbs. canola oil
- 1/4 cup brown sugar
- 1/4 cup sour cream
- 1 cup milk
- Butter - for greasing muffin tins
Instructions
- Preheat Oven 350 degrees:
- In a mix-master combine the carrots, ginger, eggs, oil, sour cream and milk. Combine the dry ingredients in a bowl and slowly add them to the wet ingredients.
- Fill the prepared muffin tins.
- Bake 15 – 20 minutes; depending on the muffin tin size; or until the toothpick test comes out clean.
- Serve with butter or cream cheese and jam.
- Prep Time: 5 minutes
- Cook Time: 15 minutes
