These muffins are perfect for breakfast with a nice cup of coffee or tea. The taste is unique with the spiciness of the ginger which I love.

Ingredients

Units Scale
  • 2 cups of spelt flour
  • 2 eggs
  • 2 inch piece of fresh ginger - grated
  • 1 cup of grated carrots
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 4 tbs. canola oil
  • 1/4 cup brown sugar
  • 1/4 cup sour cream
  • 1 cup milk
  • Butter - for greasing muffin tins

Instructions

  1. Preheat Oven 350 degrees:
  2. In a mix-master combine the carrots, ginger, eggs, oil, sour cream and milk. Combine the dry ingredients in a bowl and slowly add them to the wet ingredients.
  3. Fill the prepared muffin tins.
  4. Bake 15 – 20 minutes; depending on the muffin tin size; or until the toothpick test comes out clean.
  5. Serve with butter or cream cheese and jam.
  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
