Ingredients:
4 large zucchinis, sliced
1 medium onion
½ cup grated cheddar
½ cup grated Parmesan
4 eggs
½ cup milk
1 tablespoon flour
1 tablespoon butter
Salt
Pepper
In a large frying pan, melt butter and sauté onions.
In a large bowl, place sliced zucchini. In a smaller bowl blend together eggs, milk, flour, and seasonings.
Add sautéed onions to zucchini and toss. Mix cheeses to the zucchini and toss again. Finally, add egg and milk mixture to the zucchini and stir until well combined.
In a buttered 9-inch pie plate, pour zucchini filling and bake for about 50-55 minutes or until center comes out clean.
This is a simple, no fuss version of the classic quiche. Perfect for breakfast, lunch, or dinner!
With Love,
Catherine

Looks absolutely delicious! I love quiche, might sound weird but I like to add a tad of soy sauce before I eat my slice. Pop over for my giveaway when you get a chance : )

Quiche is so yummy but so many recipes contain meat and a heavy crust. Your zucchini quiche looks so yummy! Can't wait to try this recipe Catherine. Maybe for Sunday brunch! YUM!

Oh I really really thank you Catherine and Tammy for this beautiful meat-free recipe. I am crazy about zucchinis and I must confess I have very few recipes that include them ( mainly the coated in egg and fried recipe :)). Tammy your advice is greatly appreciated. Catherine you have a very wise young lady :).
