Sautéed Peppers with Tomatoes
Sometimes, often, I dream of places I have never been. I know that I most likely will never get their either. Therefore, the best way to get there is via imagination. Food is the vehicle that takes me places.
Get a good loaf of bread and a piece of cheese and place these peppers on top and let your imagination do the rest.
Ingredients:
3 bell peppers (any color) – sliced
3 tomatoes – quartered
5 cloves of garlic – chopped
1 red onion - sliced
½ cup Italian parsley – chopped
1 tsp. capers – chopped - plus tablespoon of juice
3-4 tablespoons – olive oil
Spices – adjust to your liking:
¾ tsp. salt
½ tsp. black pepper
¼ tsp. red pepper flakes
¾ tps. Dried oregano
¼ tsp. paprika
¼ tsp. garlic powder
¼ tsp. curry powder
Heat a large frying pan with 2 tablespoons of olive oil. Add the sliced peppers and onions and sauté until the onions are slightly golden.
Add tomatoes, capers and spices and continue sauté until the tomatoes soften completely; this will take a few minutes, about 10 minutes or so.
When the sauce has thickened add the chopped parsley, another clove of garlic chopped and a little drizzle of olive oil.
Serve hot or cold.
