I thought it would be nice to surprise everyone with something a little unexpected.
These slightly sweet and savory chicken thighs did the trick. As I started cooking, singing along to the music I felt my mojo coming back...Soon I was elbow deep in biscuit batter and making caramel apple hand pies for dessert.
I put up some coffee and watched the sun sink behind the hedge, as the sky turned to dusk. A spell was cast, the crickets came out and the fireflies began to dance in the garden. It all felt right and beautiful. Oh, what a homemade meal can do for the soul.
Ingredients:
8 chicken thighs
S&P to taste
Paprika to taste
Olive Oil
Strawberry Basil Glaze:
1 tablespoon Strawberry jam
2 sprigs fresh basil, chopped
2 cloves of garlic, crushed and chopped
Juice of ½ a lemon
Zest of ½ a lemon
S&P
1 teaspoon vinegar
Preheat oven to 350 degrees F.
Combine all ingredients for glaze, mixed well and set aside.
Clean chicken thighs, pat dry and lay out on a baking pan. Sprinkle salt, pepper and paprika over each thigh and drizzle about ½ teaspoon olive oil over each thigh.
Bake chicken for about 30 minutes. Take out of the oven and brush each thigh with glaze. Place back in the oven and let finish cooking for at least 10 more minutes, or until juices run clear.
Toodles,
Tammy

The glaze sounds yummie. I normally don't eat chicken thighs but perhaps it will work just as well on chicken breasts?????

Hi Rose, Thank you for stopping by and commenting. You could definitely use any cut of chicken you have on hand. This would be just as wonderful on chicken breasts.
Have a wonderful afternoon!

We don't eat the thighs either, but this would be good with the breast meat I would think. Thanks for the recipe Tammy.
Have a fabulous day. ☺

You know I would never have thought chicken and strawberry would go together - but looking at it - it looks delicious!
Phil in the Kitchen says
Well we've got plenty of strawberry jam this year, so this sounds like a very fine use for some of it to me. Personally, chicken thighs are definitely my cut of choice.
Tammy says
Same here, Phil...especially when it comes to a sticky sweet glaze like this...the breast may be healthier but I like that little bit of fat for added flavor. I know that's not very 'PC' of me to say though...Haha
Thanks for stopping by!
