I thought it would be nice to surprise everyone with something a little unexpected.
These slightly sweet and savory chicken thighs did the trick. As I started cooking, singing along to the music I felt my mojo coming back...Soon I was elbow deep in biscuit batter and making caramel apple hand pies for dessert.
I put up some coffee and watched the sun sink behind the hedge, as the sky turned to dusk. A spell was cast, the crickets came out and the fireflies began to dance in the garden. It all felt right and beautiful. Oh, what a homemade meal can do for the soul.
Ingredients:
8 chicken thighs
S&P to taste
Paprika to taste
Olive Oil
Strawberry Basil Glaze:
1 tablespoon Strawberry jam
2 sprigs fresh basil, chopped
2 cloves of garlic, crushed and chopped
Juice of ½ a lemon
Zest of ½ a lemon
S&P
1 teaspoon vinegar
Preheat oven to 350 degrees F.
Combine all ingredients for glaze, mixed well and set aside.
Clean chicken thighs, pat dry and lay out on a baking pan. Sprinkle salt, pepper and paprika over each thigh and drizzle about ½ teaspoon olive oil over each thigh.
Bake chicken for about 30 minutes. Take out of the oven and brush each thigh with glaze. Place back in the oven and let finish cooking for at least 10 more minutes, or until juices run clear.
