Ingredients:
2 cups flour
½ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
2 eggs
¼ cup vegetable oil
1 tsp. vanilla
¾ cup milk
½ cup sugar
½ tsp. cinnamon
For the Cinnamon Sugar Topping:
2 tablespoons sugar
1 tablespoon cinnamon
Simple Sugar:
½ cup Black Raspberry Sparkling Ice
½ cup sugar
Combine the Blackberry Ice drink with the sugar and bring to a boil while gently stirring.
Turn the heat off and let the mixture sit for approximately 30 minutes.
Preheat Oven 375 degrees:
Combine all of the dry ingredients in a bowl.
Combine the eggs, vanilla, milk and vegetable oil and gently beat with a fork, until the eggs are incorporated.
Add the liquid ingredients to the dry ingredients while stirring.
Butter the muffin tins. Fill the tins with the batter half-way. Top each muffin with the cinnamon sugar.
Bake 20 - 25 minutes or until the toothpick test comes out clean.
