For example, to maintain the traditional baking method for naan, the family devised an oven that mirrors the intense heat of ancient Indian tandoor ovens – which are typically too small to allow for large scale production. Prior to baking, all dough is made only in small batches to ensure quality, and the naan is hand stretched.

I must admit Catherine, I haven't been thrilled with the selections of Pita bread at the local grocery stores. Although they are "name brand" breads, they just don't have that authentic feel or taste. Having had Turkish friends on Long Island, I may be a bit spoiled. I learned how to make both yogurt and pita bread from them. The yogurt I have gotten down pretty good but the bread, not so much.
I will gladly search out this bread in my neck of the woods. It sounds wonderful especially with that special filling you have kindly included for us to enjoy. Thank you so much for sharing, Catherine...
