Zucchini Salad Pita Pockets

Living the Gourmet is pleased to present Stonefire Authentic Flatbreads. 


The Ajmera family has been in the backing business for over forty years, abiding by the motto “Don’t fight tradition.”  From utilizing no artificial preservatives to baking with only the finest ingredients, the Ajmera family has maintained a devotion to authenticity in their products.  The Ajmera family notes that baking flatbreads is a 6,000 year old tradition, and one that they wish to remain to true to, citing a ‘perpetual journey’ to find and create the most authentic and great tasting flatbreads the world has to offer.  While this is certainly a tall order, the Ajmeras may already have found a few key ingredients in their search for the perfect flatbread.

For example, to maintain the traditional baking method for naan, the family devised an oven that mirrors the intense heat of ancient Indian tandoor ovens – which are typically too small to allow for large scale production.  Prior to baking, all dough is made only in small batches to ensure quality, and the naan is hand stretched.


Perhaps even more importantly, all Stonefire Authentic Flatbread is made with only natural ingredients, and no artificial preservatives, colors, or flavorings.  Instead, ingredients such as buttermilk and traditional ghee form the essential components of the naan.

Having had the opportunity to sample these flatbreads, Living the Gourmet can vouch that aside from natural and authentic, these breads are simply delicious.

Ingredients:
1 cup of instant barley
2 zucchini
2 cloves garlic
2 carrots
½ cup Italian parsley
¼ red onion
1 cup chick peas – drained
½ tsp. salt
½ tsp. black pepper
½ tsp. turmeric
½ tsp. curry
Juice of ½ lemon
¼ cup olive oil
8 oz. cheddar cheese – shredded
Whole wheat pita pockets

Prepare the barley as directed; drain and cool.
Shred the zucchini, carrots, onion, chick peas and the parsley, using the shredding blade of the food processor.
Place in a bowl and season.  Add the barley and toss.
Combine the lemon juice and olive oil and add to the salad and toss.
Fill the pita with the shredded cheese and add the salad.  Top with a little more cheese, if desired.

    I must admit Catherine, I haven't been thrilled with the selections of Pita bread at the local grocery stores. Although they are "name brand" breads, they just don't have that authentic feel or taste. Having had Turkish friends on Long Island, I may be a bit spoiled. I learned how to make both yogurt and pita bread from them. The yogurt I have gotten down pretty good but the bread, not so much.

    I will gladly search out this bread in my neck of the woods. It sounds wonderful especially with that special filling you have kindly included for us to enjoy. Thank you so much for sharing, Catherine...
