Ingredients

Units Scale
  • 1 loaf of Italian bread, sliced to about 1-inch thickness
  • 16 oz. mozzarella, sliced thin
  • 1/2 cup of fresh grated Romano or Parmesan
  • Olive oil, for drizzling

Scallion Mixture:

  • 2 scallions, sliced thin
  • 3 cloves of garlic, chopped
  • 1/4 - 1/2 cup of fresh Italian parsley, chopped fine
  • 1/4 tsp. salt
  • 1/4 tsp. sugar
  • 1 tsp. dried oregano
  • 1/2 tsp. coarse ground black pepper
  • 1/4 tsp. red pepper flakes

For the Tomato Sauce:

  • 5 - 6 vine ripe tomatoes, quartered
  • 1 large sweet onion, sliced thin
  • 3 - 4 cloves of garlic, chopped
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. coarse ground black pepper
  • 1/2 tsp. red pepper flakes
  • 2 tsp. dried oregano
  • olive oil for drizzling

Instructions

For the Tomato Sauce:

  1. Heat a large cast iron pan with 2 - 3 tsp. of olive oil.
  2. Add the sliced onions and garlic and sprinkle with 1/2 tsp. of sugar and 1/2 tsp. of salt.
  3. Allow the onions to become softened and the garlic to become fragrant.
  4. Add the diced tomatoes, the rest of the seasonings, and another drizzle of olive oil.
  5. Cook on a gentle heat until the tomatoes have softened and the sauce cooks down and thickens, this will take about 30 minutes or so.
  6. Taste for seasoning and adjust the seasonings to taste.  Set aside until it is time to assemble the pizza bites.

For the Pizza Bites:

  1. In a bowl, combine the ingredients for the scallion mixture and toss.
  2. Preheat oven to 375 degrees F.
  3. Drizzle a little olive oil on a sheet pan.
  4. Layer the bread on the sheet pan and top with the sauce, mozzarella, grated cheese, scallion mixture and a drizzle of olive oil.
  5. Bake for 25-30 minutes and serve immediately.
