Sometimes, the most memorable evenings begin with a simple board set at the center of the table, filled with good cheese, a lovingly crafted butter, and the kinds of bright seasonal fruits that whisper of comfort and celebration.
This holiday grazing board features the rich, pastoral flavors of Tipperary Irish Cheese and Butter, paired with herbs, roasted garlic, and winter citrus. It is a board meant to be shared slowly - a tapestry of textures and flavors that invites your guests to linger.

The star of this holiday spread is our whipped herb butter made with Tipperary Salted Irish Butter. Its creaminess captures the essence of Irish grasslands, and when whipped into a cloud with roasted garlic, fresh sage, and fragrant sprigs of rosemary, it becomes something truly special and unforgettable.
You can also use this whipped herb butter for various recipes like mashed potatoes, buttered pasta, or roasted chicken.
Ingredient List
- 1 cup Tipperary Salted Irish Butter, softened
- 3-4 cloves roasted garlic
- 2-3 fresh sage leaves, finely minced
- 1 teaspoon fresh rosemary, minced
- Pinch of sea salt
- Freshly ground black pepper
Instructions and Notes
- Softened butter is key here (since it's so cold here in the winter, I set the butter under direct sunlight for about 20 minutes to soften).
- Once soft enough to mix, add the roasted garlic and minced herbs. Season with salt and pepper to taste.
- Mix everything thoroughly, then whip with a handheld mixer until light and airy.
- Spoon into a small serving bowl and serve with your favorite sides.

Tipperary Extra Sharp Irish Cheddar Cheese
Tipperary's Irish Cheddar Cheese pairs perfectly alongside their Pure Irish Butter in today's setting. Their Extra Sharp Irish Cheddar Cheese brings depth, character, and a gently sharp finish that balances beautifully with the richness of the herb butter we have prepared. Slice it into rustic wedges, small cubes, or shave thin slices like I did, to make it easy for guests to enjoy.


Pimento-Stuffed Green Olives
Their briny brightness cuts through the creaminess of the cheese and butter, offering a welcome contrast of flavor and texture. Furthermore, the deep green and bright red add an extra festive touch to the presentation.
Crostini
Lightly toasted slices of French or Italian bread serve as the perfect vessel for our whipped herb butter. For added flavor, rub each crostini with a hint of garlic while warm.
Alternatively, you can use your favorite gourmet crackers or breadsticks as well.
Fresh Fennel (Anise)
I grew up with fennel always served during the holiday season. It's refreshing and balancing for the richness of holiday food. I like serving palate cleansers alongside appetizers as well as post-dinner.
Thin shards of fennel add a crisp, refreshing note. For those unfamiliar with fennel, it has a distinct hint of sweet licorice.


Spiced Nuts
A bowl of warm, spiced nuts offers gentle heat and crunch. Use your favorites - almonds, pecans, walnuts, and cashews. I drizzled them lightly with some olive oil, then tossed them with a simple spice mixture of smoked paprika, lots of fresh ground black pepper, a pinch of salt, and a little brown sugar to balance the spice. Bake them for about 15 minutes, tossing halfway.
To save time, you can buy them at the store. As a bonus, they make for a nice take-home gift for the holidays! Alternatively, you can roast chestnuts for a traditional take on today's board, which is a delicious addition.
Seasonal Citrus & Pomegranate
Tangerine slices bring brightness and sweetness, while ruby pomegranate seeds scatter like small jewels across the board. They catch the light beautifully and give the board a seasonal sparkle.
If you want, in place of pomegranate, fresh cranberries will also add a touch of ruby elegance to the display.
Herb Garnishes
Fresh sprigs of rosemary and sage leaves tie the spread together, adding fragrance and a touch of woodland winter beauty.
The ingredients on the board bring so much color and flavor, so you don't need to worry too much about the garnish.

Holiday Hosting Tips
- Be mindful of placement: I always place the dips or spreads in the center and work towards the edges. It is important to be mindful of placement when you have dry and wet ingredients, such as crisp bread and fruit. I kept the dry appetizers on one side so the juice of the fruit did not transfer onto the bread (or, if you choose, crackers). Layer the cheese and try to guide the eyes by keeping the fruit alongside the edges.
- Mix colors and textures: The soft yellow hue of butter, the crunch of nuts, the crisp fennel, and the jewel-toned fruit create irresistible visual appeal. It's important to keep that in mind when building the perfect board.
- Serve at room temperature: Cheese and butter blossom in flavor when allowed to warm slightly before serving. For that reason, I like to prepare this before I'm ready to serve it rather than making it ahead of time. Of course, you can always have things prepared beforehand so assembly comes together more easily- have the cheese sliced, the herbs chopped, garlic roasted, and nuts prepared.
- Keep flavors harmonious: This board is built around rich dairy and herbal notes - the olives, citrus, and fennel keep everything balanced. I find with butterboards, you want it to feel light and satisfying, but not too heavy that it takes your appetite away before the main course.
