Ingredients
- 1 loaf of Italian bread, sliced to about 1-inch thickness
- 16 oz. mozzarella, sliced thin
- 1/2 cup of fresh grated Romano or Parmesan
- Olive oil, for drizzling
Scallion Mixture:
- 2 scallions, sliced thin
- 3 cloves of garlic, chopped
- 1/4 - 1/2 cup of fresh Italian parsley, chopped fine
- 1/4 tsp. salt
- 1/4 tsp. sugar
- 1 tsp. dried oregano
- 1/2 tsp. coarse ground black pepper
- 1/4 tsp. red pepper flakes
For the Tomato Sauce:
- 5 - 6 vine ripe tomatoes, quartered
- 1 large sweet onion, sliced thin
- 3 - 4 cloves of garlic, chopped
- 1 tsp. sugar
- 1 tsp. salt
- 1 tsp. coarse ground black pepper
- 1/2 tsp. red pepper flakes
- 2 tsp. dried oregano
- olive oil for drizzling
Instructions
For the Tomato Sauce:
- Heat a large cast iron pan with 2 - 3 tsp. of olive oil.
- Add the sliced onions and garlic and sprinkle with 1/2 tsp. of sugar and 1/2 tsp. of salt.
- Allow the onions to become softened and the garlic to become fragrant.
- Add the diced tomatoes, the rest of the seasonings, and another drizzle of olive oil.
- Cook on a gentle heat until the tomatoes have softened and the sauce cooks down and thickens, this will take about 30 minutes or so.
- Taste for seasoning and adjust the seasonings to taste. Set aside until it is time to assemble the pizza bites.
For the Pizza Bites:
- In a bowl, combine the ingredients for the scallion mixture and toss.
- Preheat oven to 375 degrees F.
- Drizzle a little olive oil on a sheet pan.
- Layer the bread on the sheet pan and top with the sauce, mozzarella, grated cheese, scallion mixture and a drizzle of olive oil.
- Bake for 25-30 minutes and serve immediately.
