This cool, refreshing watermelon salad is the perfect combo of sweet and salty. It's so easy to toss together and perfect all season long.
What's the first thing you think of when you hear summer food? So many things come to mind for me. Sweet corn, grilled hotdogs, lemonade, watermelon...one of my favorite seasonal foods to delight in.
This was the first melon of the season and I knew immediately how I wanted to serve it up. Freshly cut, tossed with creamy, briney feta, some fresh mint from the garden and to give it a little extra pops of color, oranges and kiwis (though you can use apples, berries, or peaches. Anything goes!)
I think that's the beauty of watermelon. It's so versatile when it comes to serving. The best part is the reserved juice that is perfect in a pitcher or frozen for a slushy.
Dressing the salad up is completely based on preference. Some other nice ideas here would be chopped lemon balm, fresh sliced mozzarella, or a balsamic reduction drizzled over it.
You can store it up to 1-2 nights at least, though be sure to drain it.

Ingredients
- 1 large watermelon, sliced or scooped
- 3 kiwis, sliced
- 3 oranges, peeled and chopped
- 1/2 cup Feta, cubed or crumbled
- 3 tablespoons fresh chopped mint

- Toss all the ingredients together in a bowl and serve immediately.
