    Luscious, dreamy, and refreshing this Blueberry Coconut Cream Delight is the perfect treat to cool down with. It’s sweetly balanced and satisfying with layers of fresh cream in between.

    It is a smoothie? Is it a slushie? Maybe it’s a cross between both, served parfait-style with freshly whipped cream. However you choose to categorize it, this frozen delight will leave you wanting more.

    We’re back with yet another five ingredient recipe. Honestly, it wasn’t even intentional.

    When the temps reach 90 degrees mixed with 90% humidity, the last thing you want to do is fuss in the kitchen. Enter today’s recipe. You can get creative here, and use any frozen fruit you have on hand.

    I think I speak for us all when I say that I love when something tastes decadent, but is actually effortless to whip up. With the holiday weekend approaching, this would be a perfect treat to make for everyone to enjoy.

    It’s also dare I say, guilt-free. The whipped blueberries and coconut cream give it an indulgent feel while the fresh whipped cream lightens it up. No cream cheese or added sugars here. It’s a dessert you can actually feel good about enjoying.

    Ingredients

    Scale
    • 3 cups of frozen blueberries
    • 2 tbs. vanilla
    • 1 cup coconut cream
    • 16 ice cubes (1 tray)
    • Whipped cream
    • Cherries, for garnish
    • Fresh ground nutmeg, for garnish

    Instructions

    • Place the blueberries, ice cubes, coconut cream and vanilla in a blender.
    • Blend until creamy.
    • Place a spoon of whipped cream at the bottom of a glass and add the blueberry slush, alternating between the whipped cream and blueberry slush.
    • Finish of with a dollop of whipped cream a cherry and a few gratings of fresh nutmeg.
