Here at Living the Gourmet, we are on a mission to bring healthy back into snacking.
There is common misperception that snacking includes only finger food, most times uncooked. Well, push aside the chips, unhealthy dips, and crackers. Today, I am reintroducing snack food.
To me a snack is something that is light and simple but also delicious and fresh. For my family, I have always made my own snacks, making sure I know every ingredient that goes into every dish I serve. Like most, occasionally we will cheat, but on the whole, healthy snacking is something I don't play around with.
So, while shopping for some wholesome foods the entire family can enjoy and feel good about, I came across some of my favorite Farm Rich Snacks during a recent trip to Walmart. Immediately, I was inspired to reconstitute Mozzarella Sticks and transform them into a dish that was suitable for any occasion, yet easy enough for anyone to make.
With only 6 ingredients, these stuffed mushrooms are a perfect way to get your family and friends snacking healthier with fresh produce and wholesome ingredients. Farm Rich Mozzarella Sticks are made with 100% real cheese, contain 0g trans fat per serving and are a good source of calcium and protein.
Each mushroom is packed with a creamy spinach filling that is blended with the mozzarella sticks for a helping of cheesy goodness. I finished them off with a sprinkle of breadcrumbs and a drizzle of olive oil before baking them just until the tops were golden and the mozzarella melted through.
These stuffed mushrooms are perfect for a light lunch, snack, or side dish. The possibilities are endless, and we encourage you to get your snack on and show us how you would use Farm Rich for a simple, delicious snack!

- Prep Time: 10 minutes
- Cook Time: 10 minutes
- Total Time: 20 minutes
Ingredients
- 8 Portobello Mushrooms - stems removed
- 10 Farm Rich Mozzarella sticks
- 1 lb. of fresh baby spinach
- 3 cloves of garlic
- Italian style bread crumbs - for topping
- Olive oil for drizzling
Instructions
- Preheat Oven 450 degrees F.
- In a food processor combine the bread sticks, spinach, garlic and 3 tablespoons olive oil. Process until a crumb-like mixture is formed.
- Fill each mushroom with this mixture and place on a baking sheet.
- Sprinkle each mushroom with breadcrumbs and finish with a drizzle of olive oil.
- Serving suggestion - serve with a squeeze of fresh lemon.
- Bake 10 – 12 minutes.
