Mozzarella & Spinach Stuffed Mushrooms

Ingredients

  • 8 Portobello Mushrooms – stems removed
  • 10 Farm Rich Mozzarella sticks
  • 1 lb. of fresh baby spinach
  • 3 cloves of garlic
  • Italian style bread crumbs – for topping
  • Olive oil for drizzling

Instructions

  1. Preheat Oven 450 degrees F.
  2. In a food processor combine the bread sticks, spinach, garlic and 3 tablespoons olive oil. Process until a crumb-like mixture is formed.
  3. Fill each mushroom with this mixture and place on a baking sheet.
  4. Sprinkle each mushroom with breadcrumbs and finish with a drizzle of olive oil.
  5. Serving suggestion – serve with a squeeze of fresh lemon.
  6. Bake 10 – 12 minutes.
