    This weekend, I am whipping up a Cannellini Bean & Sun Dried Tomato Dip. Its creamy texture is compound in every aspect.     Ingredients

    Units Scale
    • 15 oz. can of Cannellini Beans, rinsed & drained
    • 2 cloves garlic
    • 3-4 sun-dried tomatoes
    • 1/2 cup fresh basil
    • 1/2 teaspoon salt and pepper
    • 1/4 teaspoon red pepper flakes
    • Juice of 1/2 lemon
    • 2-inch piece of Parmesan cheese
    • 4 tablespoons olive oil

    Instructions

    1. Combine all of the above ingredients in a food processor until smooth and creamy.

      I sure do love this beautiful dip, Catherine. Especially with the sun-dried tomatoes and fresh basil. I bet you ate this on that lovely porch of yours overlooking the water. Now I need to plan a party too!
