This weekend, I am whipping up a Cannellini Bean & Sun Dried Tomato Dip. Its creamy texture is compound in every aspect. Ingredients
- 15 oz. can of Cannellini Beans, rinsed & drained
- 2 cloves garlic
- 3-4 sun-dried tomatoes
- 1/2 cup fresh basil
- 1/2 teaspoon salt and pepper
- 1/4 teaspoon red pepper flakes
- Juice of 1/2 lemon
- 2-inch piece of Parmesan cheese
- 4 tablespoons olive oil
Instructions
- Combine all of the above ingredients in a food processor until smooth and creamy.
