This post is sponsored by Blue Diamond Nut Thins.

Creamy cannellini beans and sun dried tomatoes are blended together with fresh basil, garlic and spices for a wholesome, irresistible accompaniment to Artisan Nut Thins – crisp rice and almond wafers speckled with flax-seed and nuts.

Have you tried Blue Diamond’s Artisan Nut Thins?

If you are looking for a healthy snack alternative, these crisp wafers offer loads of flavor and a deliciously nutty texture that is most perfect for dipping.

This weekend, I am whipping up a Cannellini Bean & Sun Dried Tomato Dip. Its creamy texture is compound in every aspect. The smooth base is speckled with chunky bits of citrus, tomatoes and cheese; and the flavor is bold and symmetrical with subtle hints of salt and red pepper. This dip is easy, but tastes like it was store bought at the gourmet grocery store- you know, the one that boasts of overpriced hummus and dips?

It is easy to make your own, especially when the garden is in season. Simply blend all ingredients in your food processor then serve alongside Artisan Nut Thins. This is a deceptively easy, yet gourmet appetizer or afternoon snack that will satisfy and delight.
