    Ingredients

    Units Scale
    • 4 - 5 pound boneless pork roast
    • 1/2 tsp. salt
    • 1/2 tsp. black pepper
    • 3 tbs. olive oil

    Marmalade Sauce:

    • 1 cup orange marmalade
    • 1/4 cup soy sauce
    • 2 inch piece of fresh ginger - peeled
    • 1 cup Italian parsley
    • 1 tbs. vinegar
    • 2 cloves garlic

    Instructions

    1. Preheat Oven 325 degrees F.
    2. Combine the salt, pepper and olive oil and rub the meat. Place in a baking pan and bake for 30 – 35 minutes.
    3. Combine all of the ingredients for the marmalade sauce in a food processor and process.
    4. Place 3 – 4 tablespoons of the mixture in a small bowl. After the meat cooks for 30 -35 minutes rub the meat with this mixture and place back in the oven to finish cooking; reserving the rest of the sauce for when the meat is cooked.
    5. Place the rest of the marmalade sauce in a small pan and simmer on a low heat; stirring often, for about 10 minutes. Serve this with the cooked pork.
    6. Cook the meat 20 minutes per pound at 325 degrees or until the juices run clear.
    7. Let the meat rest after removing it from the oven for about 10 minutes before slicing.
    8. Serve with the warm sauce.

Oh pork is our favorite 'meat' too, Catherine! Pork loins, as you said, are just such an easy entree to prepare. I love this marinade and will add it to my list of pork recipes! Pinning for others to see too!

      Dear Catherine,
Great recipe! It is always nice to have a roast pork without the bone. So much easier and very delectable. My mom would made a roast pork on a Sunday especially. It was a nice way to switch off from pasta and meat sauce. I enjoyed your recipe of marmalade sauce, and think it would be a perfect added ingredient to this dish. I love the fresh ginger. The flavor must be awesome and it is so good for you as well. Thanks for sharing this recipe..Enjoy your Sunday with many Blessings...
      Dottie 🙂

Catherine, We love pork in any form and shape! This is a beautiful pork loin roast... Some roasted potatoes to go with it or perhaps roasted Brussels sprouts on the side. Yum! Take Care, Big Daddy Dave

To me, the sauce looks even better than the pork! I love your pretty green and white cloth.

Okay, I'm coming over for dinner. Pork is a favorite of mine. Do you ever get the idea that I like to eat? Well you'd be right about that.

Have a fabulous weekend Catherine. ♥♥♥
