Ingredients

Units Scale
  • 4 - 5 pound boneless pork roast
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 3 tbs. olive oil

Marmalade Sauce:

  • 1 cup orange marmalade
  • 1/4 cup soy sauce
  • 2 inch piece of fresh ginger - peeled
  • 1 cup Italian parsley
  • 1 tbs. vinegar
  • 2 cloves garlic

Instructions

  1. Preheat Oven 325 degrees F.
  2. Combine the salt, pepper and olive oil and rub the meat. Place in a baking pan and bake for 30 – 35 minutes.
  3. Combine all of the ingredients for the marmalade sauce in a food processor and process.
  4. Place 3 – 4 tablespoons of the mixture in a small bowl. After the meat cooks for 30 -35 minutes rub the meat with this mixture and place back in the oven to finish cooking; reserving the rest of the sauce for when the meat is cooked.
  5. Place the rest of the marmalade sauce in a small pan and simmer on a low heat; stirring often, for about 10 minutes. Serve this with the cooked pork.
  6. Cook the meat 20 minutes per pound at 325 degrees or until the juices run clear.
  7. Let the meat rest after removing it from the oven for about 10 minutes before slicing.
  8. Serve with the warm sauce.
