    Apple Pancakes

    Moist fluffy pancakes are easier to make than you may think. Skip the shake mix, these take only minutes to whip up. With shredded apple, a dash of cinnamon, a sprinkle of powdered sugar and a drizzle of warm maple syrup, this is the way the mornings were meant to be spent.

    Pancakes are the ultimate morning treat in my house. Upon hearing that the area is expecting more snow mixed with ice, a batch of these pancakes were a sunny bright spot to the day.

    Hopefully this year Spring will make an early appearance!

    Ingredients

    Units Scale
    • 11/2 cups flour
    • 2 eggs
    • 11/2 cups milk
    • 3 tbs. canola oil
    • 1/2 tsp. salt
    • 2 tsp. baking powder
    • 2 tbs. sugar
    • 1/2 tsp. cinnamon
    • 1 apple, shredded

    Instructions

    1. Combine all of the dry ingredients in a bowl and mix together.
    2. Beat together the eggs and milk; then stir in the canola oil.
    3. Slowly mix together the wet ingredients and shredded apple into the dry ingredients and let the batter sit while heating the griddle to a medium heat.
    4. Ladle the batter onto the griddle. When bubbles begin to form on one side flip the pancakes and finish cooking on the other side.
    5. Cooking time will be approximately 2 minutes on each side. Do not flip the pancakes more than once.
    6. Serve with powdered sugar, butter and syrup or honey.

        This is just the recipe I was looking for this morning.

        My only improvement would be to list the servings it makes. While this might be subjective information per household, a standard amount made would allow an informed decision by the gatekeeper of the house.

      I know where I am going for breakfast...Catherine's place...Wow, these look amazing! It is so true pancakes makes me smile as well. It brings back memories of my dad. He is the pancake maker. When we were young he always made us pankcakes on the weekend. He would make these little ones like the size of a quarter, and my brothers and I would fight over them. My dad made plenty and they were very fluffy just like yours. Never had the apple mixed in but I love the idea. Your photo is so beautiful. it could be in a magazine.       For the life of me I haven't been able to shake this chill all day, Catherine. But, after seeing your pancakes, I do believe I'll be warming up just thinking about them:)

      We haven't had a good snowy day here for quite a while. Pancakes would be the perfect breakfast though, for a nice lazy pajama morning. I make pancakes mostly for my grandson, who LOVES them better than any other breakfast food. These apple ones look delicious- he would definitely approve of them! 🙂

      These were fantastic. I added oats and let them sit for a while. Then made sautéed apple to add as topping. So yummy
