Salad Soup

To wake a heart that has been so long forgotten

Catherine

Ingredients:
½ onion – sliced thin
1 ½ inch piece of ginger – chopped
½ cup carrots – chopped
½ cup of parsley – chopped
3 cloves garlic – chopped
1 cup of red beans – or your choice
½ head of lettuce – sliced thin
1 cup of uncooked rice
1 ½ tsp. salt
½ tsp. red pepper flakes
1 tsp. cumin
½ tsp. turmeric
1 tsp. curry
6 – 8 cups of chicken broth
½ tsp. chili powder
1 tbs. sesame oil
2 tbs. olive oil
Heat a sauce pot with the olive oil and the sesame oil.  Add the garlic, onion, carrots and ginger to simmer until the garlic is fragrant and the onion softened.
Add the broth, beans and seasonings and continue to simmer on low. 
Adjust the seasonings to your taste.
Prepare the rice as directed while the soup is simmering.
Add the lettuce and parsley to the soup and continue to simmer.
Place a scoop of rice in a bowl and cover with the soup.

    Hi Catherine, you wouldn't think this would work, but it does. I have never heard of this before, and I love it before I can taste it. So many healthy ingredients and it must be very comforting especially on theses snowy cold days. Love soup of any kind...and this is totally different!     This soup is such a great idea, Catherine. Marion insists on buying a head of lettuce every time we go shopping. Since I don't normally eat lettuce, now I know how to sneak it in to a leftover dinner rather than running out into the snow and leaving it for the rabbits, lol...Thanks for sharing, Catherine. I'm sure I'll still have some for the Rabbits too:)
