Chickpea Dip

The day is cold and very gray
This will not take my faith away
For I see the birds soar
I know the promise of the flowers yet to bloom
The gift of today; the dream of tomorrow

Catherine

Ingredients:
19 oz. can of chickpeas – drained
½ small red onion
2 cloves garlic
½ jalapeño with seeds
3 tablespoons olive oil
3 tablespoons vinegar
½ tsp. cumin
½ tsp. black pepper
1 tsp. salt
1 tablespoon sugar
Combine all of these ingredients in a food processor and give a few good chops.
Serve with your favorite chips or veggies.

    Could I use dried chickpeas for this if I soaked them overnight first?? Or even fresh ones??

      Dear Tanya, You could use dried chickpeas too. I never had fresh chickpeas that certainly sounds like a treat.

    Fabulous dip! I just had chickpeas for lunch and had some leftover. Perhaps I could mash them and turn them into this dip. Looks tempting. I love chickpeas so much and they are really good for you. I don’t particularly like the shop bought dips though.

    Dear Catherine, Your post today is so nice. Love the sunflowers and your quote. Gives me hope that someday we will see grass and flowers again. This is a wonderful recipe for a dip. Looks so good I want, some of those chips with the dip. I also love the flower you put in the middle of the dish, which actually matches your beautiful dish.
