Morning Apple Cake [by Tammy]

Life is a mystery.

Just when you begin to think that there is nothing left to look forward to, God places little blessings to remind us that there is still something greater to seek after.
Sometimes, it is just a hopeful sign of what might come to fruition in the near future.  That sign gives us hope to hold on a little longer, keep going forward and never look back.
Other times, it is just a small present. Something that brings us a little bit of joy and renews our faith in life’s mystery- even if it is just for one moment.  I have come to accept that those small moments in life, that come once in a while, are worth waiting for.
Which brings me to this delicious morning cake.  It is truly one of those small gifts in life that is sure to bring a smile to your face.  There is nothing more comforting on these still winter mornings than a cup of coffee and slice of warm apple cake.
It seems like since the holidays have ended the winter is just dragging on now.  Keep your eyes open to all the small wonders around you.  Spring is slowly sneaking its way through the cracks and I can hardly wait until it breaks through this cold spell.
Morning Apple Cake
Apples:
2 apples – peeled, cored, and chopped
½ teaspoon ground cinnamon
1 tablespoon brown sugar
1 tablespoon granulated sugar
½ teaspoon vanilla extract
For the cake:
1½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup plus 2 tablespoons granulated sugar
1/3 cup vegetable oil
2 eggs
½ cup sour cream
½ teaspoon vanilla extract
For the crumble:
3 tablespoons butter
¼ cup flour
2 tablespoons brown sugar
1 tablespoon granulated sugar
For the icing:
¼ cup confectioner’s sugar
1-2 tablespoons milk
Preheat oven to 350 degrees F.  Grease a 9-inch cake pan.
In a small bowl, combine apples, cinnamon, sugars and vanilla.  Set aside and let sit.
In the bowl of your stand mixer, blend together flour, baking soda, baking powder, salt and sugar.  Add oil and beat until a thick batter forms.  Add eggs, sour cream and vanilla until the batter becomes smooth.
Fold apples into the batter and pour into prepared cake pan.
In a small bowl, combine all ingredients for crumble.  Sprinkle generously over the cake and bake for about 25 minutes or until cake tester comes out clean.  Transfer to a wire rack and let cool for about 10 minutes, before transferring to a cake plate otherwise the cake will continue cooking in the pan.
Once completely cool, mix confectioner’s sugar and milk.  Start with 1 tablespoon of milk.  If the icing seems too thick and pasty add more milk as needed.  Note that you want the icing just thick enough to set and harden. Drizzle of the cake.
Serve & Enjoy!

    I have come to accept that those small moments in life also Tammy. They warm the heart and soul:) If I seem like I'm in a rush, that's because I'm headed to the kitchen to bake up this cake for Marion. This weather has her feeling her age and is giving her a bit of claustrophobia. I think this apple cake is just what the doctor ordered! Thank you so much for making our day brighter...
