Easy Spinach Frittata

It is cold, very cold; yet, the sun is shining bright and the skies are clear, for this is the metaphor of life that is waiting patiently to blossom and then flourish.

Ingredients:
6 eggs
1½ cups cooked spaghetti
10 oz. package of frozen spinach - cooked and drained
1 cup shredded Monterey Jack cheese
½ tsp. salt
¼ tsp. black pepper
Butter for greasing
Preheat Oven 350 degrees:
Butter a 10 inch cast iron frying pan. 
Beat the eggs in a bowl; add the cooked spaghetti, half of the shredded cheese, salt, pepper and drained spinach.
Toss and place in the prepared pan.  Top with the rest of the cheese.
Bake for 30 - 35 minutes.

    I sure like the word "easy" in this title. It seems I don't make frittatas much because they seem so time consuming. Pinning this one and thanks for sharing the recipe. I've always thought of potatoes when I think about frittatas ... love the pasta.
