Easy Spinach Frittata

It is cold, very cold; yet, the sun is shining bright and the skies are clear, for this is the metaphor of life that is waiting patiently to blossom and then flourish.

Ingredients:
6 eggs
1½ cups cooked spaghetti
10 oz. package of frozen spinach – cooked and drained
1 cup shredded Monterey Jack cheese
½ tsp. salt
¼ tsp. black pepper
Butter for greasing
Preheat Oven 350 degrees:
Butter a 10 inch cast iron frying pan. 
Beat the eggs in a bowl; add the cooked spaghetti, half of the shredded cheese, salt, pepper and drained spinach.
Toss and place in the prepared pan.  Top with the rest of the cheese.
Bake for 30 – 35 minutes.

    Catherine, Looks like a nice easy to prepare dish… Love spinach and cheese but I prefer rigatoni, only because I’m less likely to ‘wear’ it when I eat it! With spaghetti, my wife always tells me I should use a bib! Thanks for the recipe…and Take Care, Big Daddy Dave

    Hi Catherine, What a wonderful recipe to share! I love this dish, one of my favorites. My mom would sometimes have left over spaghetti, spinach, and cheese. She then would make a mouthwatering Frittata.The only thing she did differently was that she would cook hers on top of the stove, not in the oven. She was and still is the best flipper I know. Nary a drop spilled when she would turn the Frittata over on a plate and then in the pan. I loved it when all the spaghetti would get crispy, that to me was a fun way to eat this delectable dish. Brought back memories of my childhood, Thanks…Blessings dear Catherine… 😉
