It is cold, very cold; yet, the sun is shining bright and the skies are clear, for this is the metaphor of life that is waiting patiently to blossom and then flourish.

Ingredients:
6 eggs
1½ cups cooked spaghetti
10 oz. package of frozen spinach - cooked and drained
1 cup shredded Monterey Jack cheese
½ tsp. salt
¼ tsp. black pepper
Butter for greasing
Preheat Oven 350 degrees:
Butter a 10 inch cast iron frying pan.
Beat the eggs in a bowl; add the cooked spaghetti, half of the shredded cheese, salt, pepper and drained spinach.
Toss and place in the prepared pan.  Top with the rest of the cheese.
Bake for 30 - 35 minutes.
Enjoy with Love,
Catherine

What an amazing recipe! I need to try to make a frittata! I tried one ages ago and it came out horribly, but your recipe looks easy! Thanks for linking up with Foodie Friends Friday!
