After cleaning out the house of all those holiday guilty pleasures, it's nice to get back into a healthful groove, starting with this light, refreshing, but oh so delicious tuna salad, inspired by Livin' Lean with Trader Joe's by Jamie Davidson, M.S.
Trader Joe's has become one of the best go-to places for people who want to find healthy and reasonably priced food.. I especially love their coffee. It's been a pleasure to review their cookbook today. These easy to prepare and wholesome recipes are perfect for getting back on track after the holidays.

Tuna Salad w/ Buckwheat & Raisins
Salad:
10 oz. solid white tuna in water
1 stalk celery, chopped
1/4 red onion, chopped
1/8 cup raisins, chipped
1/2 cup instant buckwheat barley
1 tablespoon fresh ginger, grated
Dressing:
Juice of 1/2 lemon
1 tablespoon soy sauce
1/2 teaspoon teriyaki sauce
Juice of 1/4 orange
1 teaspoon vinegar
Toast (optional)
In a large bowl combine all the ingredients for the tuna salad.
In a small cup mix the ingredients for a dressing. Pour dressing over tuna salad and toss. Serve over toast or with your favorite crackers.

Looks like we did the very same thing. Our house is void of all Christmas goodies. It's time to eat more healthy meals. This sounds very good too. Tuna is a favorite of mine.

I frequently top my tuna salad with dried cranberries. I imagine that raisins add a similar twist. I'm intrigued about the barley, though!

I too, am so sad Christmas is over. I hate saying goodbye to family! Oh well, that is what makes the holiday special. I made tuna salad for the first time in years last week and am now hooked! It’s always a bit bitter sweet when the holidays end…All that preparation and then in a few hours it’s over! I do love Christmas and all the prep but the clean up…not so much!
