Sautéed Chicken Cutlets with Caribbean Spice Blend

Living the Gourmet is happy to introduce Lola’s Spices: No Wimpy Flavors courtesy for the Caribbean Shopping Channel.
Lola’s Spices proves to be a bold blend of seasonings that are available in three distinct flavors; Cajun, Caribbean, and Southwest.
Today Living the Gourmet is featuring Lola’s Caribbean Blend, a spicy, sweet and earthy fusion that compliments any meat, fish, side dish or vegetable.  The ingredients include, sugar, coconut, garlic, salt, mango, turmeric, spices and habanero pepper.  
You will not find any MSG, ‘free flowing’ or ‘anti-caking agents’ in these products, only the most natural of ingredients.  Lola’s Spices are also naturally low in sodium.

Ingredients:


3 lbs. boneless chicken breast – sliced into cutlets approximately ¼ inch thick
2 cups instant potato flakes
1 tablespoon of Caribbean Spice Blend
Vegetable oil for sautéing

Mix the Caribbean Spice Blend with the instant potato flakes and toss.

Dip each side of the cutlet into the potato flake mixture and set aside.

Heat a large cast iron frying pan with about ¼ inch of vegetable oil.

Carefully, place the cutlet into the heated oil.

Let the cutlet sauté until golden and turn to finish cooking on the other side, for ¼ inch thickness is approximately 2 – 3 minutes each side.

Depending on how thick you sliced your cutlets will determine the cooking time.

    Catherine, I love chicken and I like it prepared like this…sautéed/fried with different seasonings to provide variety. Best yet, any leftovers in my house would end up being great sandwiches! Thanks and Take Care, Big Daddy Dave

    Spicy chicken is the best! It makes incredible leftovers for sandwiches and pastas. The potato flakes is such a good idea!

    My New Year’s resolution for next year is to start shopping online. I can’t think of a better way than to begin with spices. I love that you have “breaded” these cutlets with potato flakes.     We don’t have this spice as far as I know but we do have many like it and I’m intrigued but the potato flakes so I think I will give this a try with some I have. Are the spices a wet or dry mix?? If wet is it like a sauce or a paste??
