    Chickpea Patty Sandwich

    I know not where the day will bring me; though I trust.  I know not how cold the night will be; though I trust.   As I look at the dusk; I see the beauty that is there for all.  I see the hope for the day that has yet to be born; the dreams that I have not yet dreamt; the prayers that are in my heart; and so I trust.  I trust.

    Ingredients:
    1 cup chick peas
    ½ cup corn meal
    1 tsp. jalapeño salsa
    1 egg
    ½ cup milk
    ¼ tsp. salt
    1 tablespoon vegetable oil
    Vegetable oil for frying
    Combine all of the above ingredients in a food processor and process until smooth.
    Form the mixture into ½ inch thick patties.
    On medium heat; heat a large frying pan with a tablespoon of vegetable oil.  Carefully place the patties in the frying pan.   Let the patties get golden on one side then carefully turn over and finish cooking on the other side.
    Place on your favorite bread with your favorite sandwich toppers.
