    Simple Pumpkin Muffins

Written by Living the Gourmet, a trusted food and lifestyle site since 2008.

The orange, yellow, and burgundy colors of the season remind us that it is time to gather, prepare and enjoy the seasons harvest with those who are in our hearts.

    Ingredients:

    2 ½ cups self-rising flour
    ¾ cups sugar
    1 cup milk
    5 tablespoons butter
    1 egg
    1 cup 100% pure pumpkin
    1 tsp. vanilla
    1 tsp. ground cinnamon
    Topping:
    1 tsp. ground cinnamon
    3-4 tsp. sugar
In a mix-master combine the sugar and the butter and mix until smooth.
In a medium sized bowl, combine the milk, vanilla, egg and pumpkin and stir until the egg is beaten.
Add the milk and pumpkin mixture to mix-master and mix on low.
Combine the flour and cinnamon and slowly add to the mix-master and mix until well incorporated.
    Combine the sugar and cinnamon.
    Preheat Oven 350 degrees:
Butter cupcake tins and add the batter.  Top with the cinnamon sugar mixture.
Bake 25-30 minutes or until the toothpick test comes out clean.

    Enjoy with Love,

    Catherine

These look wonderful, I am making them today! Do you have the nutritional values for these?

I love both the recipe (looks fantastic), but also the thoughtful way you approach food as so much more than physical sustenance - truly lovely 🙂 I'm so glad to have found your site as well - I need to brew a cup of tea and just sit with it for a cozy hour (or two!) warmly, Andrea :: Crafting Connections

Beautiful muffins, Catherine, and I love their simplicity so that the pumpkin flavor is the star! Love the new header on your blog, too! Thanks for sharing and have a wonderful Wednesday! xo

For the longest time the only way I cooked with pumpkin was in pie, not any more! Your muffins sound just perfect, Catherine. Thank you so much for sharing...

Hi Catherine, It is not Fall until I can smell the aroma of pumpkins in muffins, pies, or cakes. Great recipe! By the way I love your plates that you present your recipes on. Just beautiful and colorful as well. Thanks for the recipe...Blessings Dottie :o)
