Lemon Zucchini Salad

The crickets are serenading the evenings. They sing their hearts out, each with its own song.  I love the songs of the crickets.  I leave the windows open and let the breeze flow through with the lovely songs of the crickets singing me to sleep.

Ingredients:
4 zucchini – roughly skinned and sliced
4 – 5 cloves of garlic – chopped fine
1 medium red onion – chopped small
4 stalks celery – chopped small
¼ cup fresh Italian parsley – chopped
½ cup instant barley
Lemon slice for garnish
For the Dressing:
Juice of 2-3 lemons
½ cup olive oil
½ tsp. red pepper flakes
1 tsp. salt
1 tsp. dried oregano
Cook barley as directed and set aside.
In a large bowl combine all of the ingredients for the salad.  Add the cooked barley and toss.
In a small bowl prepare the dressing and stir.  Add to the salad and toss.
Garnish with a lemon slice.

    Does this ever look good! This is a keeper for me. Thanks Catherine! Don't know if I ever told you that I am originally from Long Island - Bellerose....I was just up visiting family in Deer Park. I miss Long Island :( My favorite beach is Jones Beach. Spent most of my childhood on that beach!

    I too love the songs of a summer evening. We don't have as many crickets in PA it seems, but we sure do have a symphony of other "night owls" who like to serenade us.

    Your salad looks lovely and sounds refreshing. The lady next door came over last night to drop off a couple of zucchini. Now, I have a new idea for serving them up.

    Catherine, the chirping of crickets is one of the things I miss the most in the winter. I love to go to sleep with the window open and the crickets chirping - it is so soothing. Anyway, I digress, your salad looks and sounds really good. I love the seasonings you used with a light lemon flavor. Yum. Thank you for sharing on the BBQ Block party.
