These desserts are so delicious and rich you would never think they were dairy free. To jazz it up a little, I dipped them in a crispy chocolate coating!
Bowties with Scallions
The easiest part of a day is when the coffee is brewed and the cream is poured and the first sip is taken. You wish the whole day could be the first sip. Ah, but regretfully, it cannot, so you do the next best thing you pretend each sip is the first sip of the day; until the nighttime comes and you sigh and say that wasn’t so bad I made it through with the help of my imagination, a little fortitude, a little humility and a little prayer.
Ingredients:
3 bunches of scallions – sliced
2 bell peppers – sliced
5 cloves of garlic – sliced
1 quart of button mushrooms – sliced
1 inch piece of fresh ginger – sliced
2 stalks of celery – sliced
¼ cup of fresh basil – chopped
2 tbs. olive oil
1 box of your favorite macaroni
Dressing:
Juice of 2 lemons
1 tbs. capers – chopped – plus 2 tbs. caper juice
¼ tsp. red pepper flakes
½ tsp. salt
3 tbs. olive oil
Prepare the macaroni as directed while cooking the veggies.
Heat a large frying pan with the olive oil; add the mushrooms to sauté and become a nice golden color. Remove the mushrooms and set aside.
In the same frying pan heat 2 tablespoons of olive oil and add the veggies. Cook the veggies down until slightly wilted then add the mushrooms back in and toss.
Plate the macaroni; top with the sautéed veggies and stir in the dressing; toss and serve.

Chocolate Dipped Cuties
Ingredients:
Your favorite Tofutti Cutie Flavor
1/2 lb. dark chocolate
1/2 cup rice crispes
Melt chocolate and add rise crispes or crunches of your choice.
Dip Cuties into coating and lay out on a parchment lined tray. Refreeze for 20 minutes.

As I sit here "sipping" on my second cup of coffee this morning, I take your words and relish them:)
Pasta is just so versatile, every now and again it's refreshing to combine it with pronounced flavors and no sauce. You have served up a delicious combination!
As for those Tofutti Cuties, my grandson, Noah, has dairy issues and he really enjoys them. I will have to suggest to my daughter to chocolate dip them and crisp them up. His birthday is in a few weeks I bet they would make a great party treats.
