Stuffed Bell Peppers

Some of the most delicious moments come from the simplest of ingredients.  I think that this is true in life too.  Some of the most remembers days are the days that are spent in simple pleasures.  I am very grateful to Him for these memories.

Ingredients:


3 bell peppers – any color – slightly roasted
2 ½ cups fresh breadcrumbs
1 tablespoon capers – plus a tablespoon of caper juice
3 cloves garlic – chopped
¼ cup fresh basil – chopped
1 tablespoon sun dried tomatoes – chopped
1 tablespoon lemon juice
½ tsp. red pepper flakes
½ tsp. salt
¼ tsp. black pepper
¼ cup Parmesan cheese – grated
¼ cup olives – chopped
½ cup of grated mozzarella cheese
Olive oil

Heat a large 10 inch cast iron frying pan and place the peppers whole in the pan.  Let the peppers become slightly charred on each side.

Remove the peppers, set aside and let cool.

In a large bowl combine the breadcrumbs, garlic, basil, sun dried tomatoes, salt, black pepper, red pepper flakes and chopped olives 

Heat a large 8 – 10 inch frying pan with two tablespoons of olive oil.  Add the breadcrumb mixture and toss; allowing the bread crumbs to become golden.  Add  the lemon juice and Parmesan cheese and toss.

Halve the bell peppers and gently take out the seeds and ribs.

Stuff the peppers and top with the mozzarella.

Preheat the Oven 350 degrees:

Bake the peppers for 20 – 25 minutes.

    This dish is so easy to make. I don't have many recipes on cooking bell peppers, this is simply great.

    Yummyyy! Stuffed bell peppers look so delicious. They are my personal favorite. We don't get capers here. Mom generally uses a very spicy and tangy potato stuffing :)

    Oh how I adore stuffed peppers, Catherine. We often had them on Fridays when I was growing up because we didn't eat meat on Friday's.

    I should make them more often. Marion loves them too. I like the way you charred the peppers first before stuffing them. I'll need to remember that for next time.

    I love stuffed peppers but don't like my peppers really slimy so I always cook the filling really well before hand then just blast them in the oven for about 10 minutes.
