    Potato Salad

    Jul 13, 2013 · 16 Comments

My mom never prepared potato salad with mayonnaise when I was growing up.  It just was not served.  This is a version of the many different salads my mom would come up with.  She rarely ever served the same thing twice either.  Psst….the dressing is real good when you dip a piece of crusty bread in it.
    Ingredients:
    3 lbs. potatoes
½ cup fresh basil – chopped
2 vine ripe tomatoes – blanched
    2 cloves garlic – chopped
¼ cup Parmesan cheese – grated
    Juice of ½ lemon
    ½ tsp. salt
    ¼ tsp. black pepper
    ¼ tsp. red pepper flakes
    ½ tsp. dried oregano
    3 tablespoons olive oil
Boil the potatoes until fork tender; drain and cut the potatoes into quarters.  Add the garlic while the potatoes are still warm.
In a small sauce pot quickly blanch the tomatoes for a minute.  Set the tomatoes aside to cool.  When the tomatoes are cool gently remove the skin and dice the tomatoes.
Add tomatoes to the potatoes and garlic.
Add the basil, salt, red pepper flakes, black pepper and oregano.
Combine the olive oil, lemon juice and Parmesan cheese in a small bowl and mix.  Add this dressing to the potatoes and toss.
Place in the refrigerator to cool before serving.

    Enjoy with Love,
    Catherine

My mother always used mayo and a bit of mustard in her potato salad and it NEVER changed. It was her summer signature dish.

I'd love to try your mom's salad.

Catherine, The ingredients for this potato salad sound terrific. My problem is that I've never understood why anyone would want to eat cold potatoes. (My wife will like this recipe though...) Take Care, Big Daddy Dave

This sounds wonderful. It is great to find a potato salad that isn't all creamy. This sounds like it will be so much more refreshing and appetising on a hot summers day. Mums definitely know what they're talking about!!

Ours were never served WITHOUT mayo. 😉 I'm glad to have this one to give a try! Much safer for the summer picnic! blessings ~ tanna

This looks very tasty. I would love trying it without Mayo...it sometimes seems too heavy with it!

Tanna is right - I usually see it with mayo - but this is a great alternative! Sandie

The only potato salad I have ever tasted without mayo is German Potato Salad. And that if I remember was usually warm. This sounds like a nice refreshing potato salad especailly without mayo.

      Thanks for sharing, Catherine...

Que rica esta ensalada, además una de las cosas que me ha llamado la atención es que has dejado la piel de la patata, desde luego la emsalada estara mucho mas sabrosa, besos

I am not a big fan of mayo in potato salads and am always looking for alternatives. This sounds right up my alley!

[…] You could go with a traditional creamy potato salad, or you could be a bit more subdued with an Italian style potato salad. Finally, you could be ‘gourmet’ or ‘trendy’ with a pickled ginger and sweet potato salad. […]
