Morning Glory – By Tammy

When you sit out tomorrow morning and watch the light of a new day break through the horizon, wave goodbye to yesterday’s sorrows and woes.  Something beautiful and new is about to begin.

Good morning, everyone.

It is Sunday.  Summer of 2013.

Sunday always give me a good feeling.  I hope today is a good one for you…and may the rest of your week be just as lovely.

Sitting out with Mom, sharing a few words over a cup of coffee and a homemade morning muffin….Gosh, I can’t think of a better way to start my day.  Such beautiful memories 🙂

 Glorious Morning Muffins with Brown Sugar Crumb Topping

Muffins:

2 eggs
3 tablespoons margarine or butter
1/4 cup milk
1/2 cup brown sugar
1/2 cup white sugar
2 cups AP flour
1 teaspoon baking soda
1 teaspoon baking powder
2 carrots, shredded
1 apple, shredded

Crumb Topping:

1/4 cup brown sugar
3 tablespoons AP flour
3 tablespoons margarine or butter, melted
Sprinkle of cinnamon

Preheat your oven to 350 degrees F.  and line your muffin tin.

In a large bowl mix together flour, baking soda, and baking powder.  Set aside.

In the bowl of your electric mixer, beat together eggs, margarine, milk, and sugars.  Slowly add in the dry ingredients.  Mix until batter is smooth.  Stir in carrots and apple.  Fill muffin tins.

In a small bowl combine all ingredients for crumb topping.  Sprinkle generously over muffins.

Bake for about 20-25 minutes or until tester comes out clean.

Serve warm with a cup of coffee.  😉

    I sure wish I could have some coffee and one of these muffins with my mother. She was my best friend and left us 20+ years ago. I still miss her every single day.
