    Italian Style Tuna Salad

    The weather has been too hot to cook and ones imagination is put to work taking old standards and putting a twist on them; I give you Italian Style Tuna Salad.

    Ingredients:

    2 (5 oz.) cans of solid white tuna - drained and shredded with a fork
    1 tsp. capers - plus 1 tsp. caper juice
    4 leafy stalks of celery - chopped
    ¼ red onion - chopped
    4 baby carrots - chopped
    ½ cup chopped black olives
    ½ tsp. salt
    ½ tsp. black pepper
    Dressing:
    3 tablespoons vinegar
    Juice of ½ lemon
    1 tsp. sugar
    ½ tsp. salt
    ½ tsp. black pepper
    4 tablespoons olive oil
    Combine the tuna and all of the ingredients in a bowl.  Mix the dressing and add.
    Toss and chill.
    Serve on a bed of your favorite greens.

      Love a different way to make tuna. Normally, I just make tuna the old-fashioned way, but this is way more interesting. Love your header!
