The days are gradually getting shorter, though the weather is hot and summer is in full swing. One keeps thinking of all the things to achieve and do while the mind yearns to take time to enjoy the beauty and serenity of the evening sunset; one of the many blessings of life.
For the Chicken:
6 boneless, skinless chicken thighs
1 tsp. ground cumin
3 tablespoons lime juice
½ tsp. salt
½ tsp. black pepper
½ cup fresh basil - chopped
1 tablespoon balsamic vinegar
1 tsp. sugar
2 tablespoons olive oil
In a large bowl combine all of the above ingredients with the chicken; cover and place in the refrigerator for at least and hour to over night.
Heat a large frying pan with a tablespoon of olive oil and add the chicken thighs. Do not overcrowd the pan. Sauté the chicken thighs five to six minutes on each side. Check the thickest part of the chicken to see that the juices run clear.
For the Zucchini:
Ingredients:
4 zucchini - sliced into spears
Zest of 1 orange
½ tsp. salt
½ tsp. black pepper
2 tablespoons olive oil
Place the sliced zucchini in a shallow dish and add the zest, seasonings and olive oil.
Heat a medium sized frying pan with a tablespoon of olive oil and sauté the zucchini until a little golden color appears.
