A Birthday and A Blueberry Pie

Happy Birthday Daddy
I would like to dedicate this post to my Dad. Today is his birthday and I miss him a lot. 
He died when I was sixteen, though the years I was blessed with him were precious and the most impressionable of my life. He taught me more in those years than could be imagined. He was a thinker, a creator, a doer, an artist, a poet, a lover of music, a dedicated family man, a patient man, a fisherman, a coffee lover, a delicious cook and most important a dreamer. 
I miss the conversations. He loved the simple things in life to the fullest. 
He died much too early in my life. I miss him and think of him each and every day. 
I was very blessed to have him for those sixteen years of my life. 
I am my father’s daughter.
I love you Dad.

Flakey Butter Crust: 
(Makes 2 crusts) 
2 ½ cups AP flour 
1 stick margarine 
2 tablespoons shortening 
2 tablespoons sugar 
¼ cup iced water 
Blueberry Filling:

2 pints fresh blueberries 
4 tablespoons AP flour 
½ cup sugar 
Zest of ½ a lemon 
Raw Sugar for Sprinkling 
Preheat over to 350 degrees:

 Line a baking sheet with parchment paper and set aside. 
In a small bowl, combine ingredients for Blueberry Filling. Give it a gentle toss and set aside.
In large bowl combine all ingredients for Flakey Butter Crust until a soft dough forms. Turn over onto a well floured surface and knead gently 4-5 times. Do not over knead!Cut dough in half and reserve other half for later. 
Roll out one of the doughs to fit a 9 ½
 inch pie dish. Fill the pie with blueberry filling. 
Roll out reserved dough and gently cover over pie. Trim the edges and pinch with a fork. Taking a knife, make little incisions all around the pie. For the finishing touch, brush pie with water and sprinkle with raw sugar. 
Place pie dish on lined baking sheet and bake for about 30 minutes or until the crust is golden. 
Transfer to a cooling rack and let cool for several hours before serving. 
OPTIONAL: Blueberry Hand Pies 
In step 4, rather than fitting a pie dish, take a pizza slicer and slice the dough into 6 equal sized squares as pictured above. 
Place about a tablespoon of blueberry filling towards the edges of the square and fold over, pinching the edges closed with a fork. 
Beat 1 egg and with 1 teaspoon water. Brush each hand pie with egg wash and sprinkle with raw sugar. 
Place on a parchment lined baking sheet and bake for about 25 minutes or until bubbly and golden.

    Catherine, what a heartfelt and beautiful post. I, too, lost my Dad much too early, when I was 14 and I can feel all of the emotion in your words. The pie sounds just wonderful. Thank you for sharing - I know that, in spirit, each of our Dads are with us always.
