Zucchini Fritters

Sometimes we dream about visiting places we see pictured in our mind.  Places where our parents and grandparents, great-grandparents grew up and told us stories about.
This is not always possible so we take ourselves there with food and with music.  I am blessed to hold the stories of these places in my heart.  The music of Italyis in my heart too.  My dad used to put on the record player (stereo!) and I would fall asleep listening to the beautiful Italian songs.  This is a recipe similar to my moms.  If the zucchini in my garden grow I look forward to frying the flowers.  That was so delicious.

Ingredients:
4 zucchini – shredded
¾ tsp. salt
½ tsp. cumin
½ tsp. garlic powder
¼ tsp. red pepper flakes
½ tsp. baking powder
½ cup flour
½ cup cornmeal
2 eggs
½ cup milk
1 small onion – chopped
¼ cup chopped – Fresh Italian parsley
3 tablespoons of olive oil
Shred the zucchini into a bowl and add the chopped onion. 
In a separate bowl combine the flour, cornmeal, baking powder and seasonings. 
In a separate bowl whisk together the eggs, milk and parsley add to the zucchini and mixture and then add the dry ingredients and stir until incorporated. 
Let this mixture sit for about 5 minutes.
Heat a large cast iron frying pan with a tablespoon or two of olive oil.  (You may need and extra tablespoon during the sautéing process.)
Spoon the batter into the frying pan.  Do not overcrowd the pan.  When cooked on one side flip and finish cooking to a nice golden color.  This will take about 2 -3 minutes on each side.  Do not make the heat too hot or you will burn them.
Serve with a little sour cream.

    Did you say zuccchini fritters?? I'm growing zucchini this year!! While I love zucchini bread I'm always looking for new zucchini recipes and who doesn't love a good fritter. My sister makes a great corn fritter (known in the family as belly bombers). Your recipe sounds light, and delicious Catherine! Perfect for summer! Thanks for sharing.

    In Italy we call these wonderful dish "frittelle", and I love them, but we use less spices, why??
    I don't know but next time I will try with some different flavours as usually, I like your version!!

    Zucchini fritters are so good and when we had 40 million of them growing I got sick of eating them. That was quite a while ago and now I'm ready to try yours. They look really good.

    Catherine, Zucchini fritters...another dish I've never heard of. We like zucchini and fritters, so why not combine the two! I think that my wife would probably opt for ranch dressing for the dip... Take Care, Big Daddy Dave
