Simple Banana Bread

Lots of people like new things.  I do like new things, but I love old things.  New things need to get personality and lines of time.  They need to have memories attached to them so that when you look at them you get a little smile and a fond memory.  I love the comfort of something getting the look of time and the ease at which you find yourself with this.

My world is starting over since the hurricane claimed most everything I owned.  I do miss my old belongings, since it was passed down from my parents, but I think the Lord might have been thinking that I needed a clean slate to start a new chapter in my life. 

I haven’t found the things to replace my old belongings, but with time and patience I will find them. I know from experience you cannot hold on to things, everything can be lost in a minute; but the most important gift are memories and no one can take those, they are always yours to fill your heart and soul.

Ingredients:
3-4 Bananas
1 cup sugar
1 cup brown sugar
4 tablespoons butter
3 eggs
1 tsp. baking powder
1 tsp. baking soda
2 cups flour
Β½ cup chocolate cookie crumbs – (or vanilla cookies, the choice is yours)
Preheat Oven 350 degrees:
In a mix-master combine the bananas, butter and the sugars and mix on low.   Add the eggs and continue to mix on low.
In a separate bowl combine the flour, baking powder and the baking soda.  Slowly, add this to the banana mixture and continue to mix on low speed until a batter is formed.  This will only take a minute.
Butter a bread dish and add the mixture to the prepared dish.  Top the batter with the cookie crumbs.
Bake for about 50-55 minutes or until the toothpick test comes out clean.

    I love banana bread, I have never tried it with cookie crumbs though but luckily I have some over ripe bananas crying out to be made into cake so I will give this one a try over the weekend!

    Your version of banana bread looks delicious. It must be a daunting and unsettling to lose all the familiar things that we kind of depend on to anchor us. But you are right, things are very temporal. I’m glad for memories that last, and also for a new start for you:)
