~ Yellow Squash with Fragrant Rice ~

Ingredients:
2 yellow squash - skinned and sliced
5 cloves of garlic - chopped
1 red onion - sliced
Dashes of red pepper flakes
Dashes of salt
Olive oil
Grated Romano
Heat a large frying pan with a drizzle of olive oil.  Add the sliced onion and garlic and sliced squash, season with salt, pepper and red pepper flakes.  Gently, sauté until the squash is slightly golden.
For the Rice:
2 cups uncooked rice
1 tsp. brown sugar
½ tsp. curry powder
Dash of turmeric
Cook the rice as directed adding the spices to the water used for cooking the rice.
Plate the rice and top with the sautéed squash, drizzle olive oil, dash of red pepper flakes and grated Romano cheese.
This is a very easy and nice side dish.

    This sounds great, I didn't grow yellow squash though but I'm sure it wills taste and look just as good with the green squash!!
