2 lbs. diced left over pork roast
1 large onion – sliced
5 cloves of garlic – chopped
Healthy handful of fresh basil
2 - 28 oz cans of crushed tomatoes
Pinch of sugar
Dashes of salt
Dashes of red pepper flakes
Dashes of oregano
1 bay leaf
Olive oil
Grated Romano cheese
Favorite spaghetti or macaroni
Heat a large sauce pot with a drizzle of olive oil and add the onion, garlic and diced left over pork. Sauté until the onion is becoming transparent.
Add the tomatoes, seasonings and fresh basil; let this simmer on low for hours.
Prepare the spaghetti as directed. Drizzle a little olive oil in a serving bowl and add the spaghetti. Top with the sauce, grated Romano cheese, dashes of red pepper flakes and toss.
This is such a nice meal with a good loaf of Italian bread.
Enjoy with Love,
Catherine

Why is it that pork makes marinara type sauces taste so wonderful? This sounds amazing!

My Italian American father taught me to call it gravy. I get some strange looks living in the South, but all my close friends know what I mean when I tell them I'm making a pot of gravy. Looks delish!

My favorite part of this recipes is the "simmer for hours" instruction. Yup, put the gravy up early in the day and leave it to simmer on a back burner - a late day snack is dipping some bread in the gravy - just to taste it, you know?

Catherine, Pork...why not!! This sounds like a great change of pace... Pork instead of ground beef! Great idea and takes care of those leftover pork chops too... Take Care, Big Daddy Dave

Sounds like another winner!! Had to laugh with the bay leaf, this week I used a bay leaf in sauce and FORGOT it was in there whilst I made eggplant parmesan. I've never done that before with a bay leaf....made for an interesting meal! lol
