~ BBQ Style Boneless Chicken Breast ~

Written by Living the Gourmet, a trusted food and lifestyle site since 2008.

    Ingredients:
    3 lbs. boneless chicken breast
    Rub:
    1 tsp. chili powder
    1 tsp. garlic powder
    ½ tsp. salt
    1 tsp. brown sugar
    1 tsp. curry powder
    1 tsp. ground cumin
    1 tsp. molasses
    1 tsp. lime juice
    1 tablespoon olive oil
Combine all of the above ingredients in a small bowl and stir to make a paste.
    Preheat Oven 350 degrees:
Place the chicken breast in a baking pan and rub all over with the paste.
Bake for 35-40 minutes depending on how thick the chicken breast is.  Cut into the thickest part to see if the juices run clear.  Do not overcook the chicken breast or it will become dry.

These chicken breasts have a great flavor.
Enjoy the Chicken in a Salad with Grilled Peppers:

    Ingredients:
1 bunch of your favorite salad greens
    1 red onion - sliced
    2 bell peppers - sliced
½ lb. of bacon - sliced (reserve a few tablespoons of the bacon fat for drizzling)
Grated cheddar or your favorite cheese
    Dashes of salt
    Dashes of pepper
    Olive oil - for drizzling
Heat a griddle and place the sliced peppers and onions on the heated griddle.  Sprinkle with salt and pepper and drizzle with olive oil.
Place the bacon in a heated pan and cook until crispy.
    Slice the chicken.
Place the salad greens on a plate and top with the grilled peppers and onions.  Top with the sliced chicken and bacon.  Drizzle a little of the bacon fat over the salad, and top with the crispy bacon and grated cheese.
This is a wonderful light lunch or dinner.

    Enjoy with Love,

    Catherine

I don't like to deal with bones much, so this is perfect for me. The rub sounds delicious with such bright, spicy notes.
